Sunday Dinner

God is the joy and the strength of my life. 

It has been a wonderful Sunday...gorgeous weather, easy flowing preparation for church, great church service (shout out to Fallbrook Church) and wonderful Sunday meal.

For most mothers and some fathers, we know the general duty of waking up the household and prepping for whatever the day holds can be a daunting task.  This morning was heaven sent.  D (my son) woke up at a decent time and in a great mood as always.  Hubby knew what he was wearing.  I didn't change outfits, not even one time.  If anyone has talked to my husband he will not hesitate to let you know that before leaving the house I change, probably a minimum of 3 times.  So, the fact that I didn't change once is superb.  Walking out the door, I felt on top of the world.  Church service took me to another level and left me desiring to show my love towards my family through food. 

I came home and prepared a delicious meal of Oven Barbecued Chicken Wings, Mixed Greens, Loaded Mashed Potatoes and Jambalya rice.




The entire family loved it, and even asked for seconds. 

Another meal down and I hope that through this, they see how much I love them.

Oven Barbecued Chicken Wings

Many times I come home from work or some other daily activity and need a meal that is good and hearty, yet doesn't take a lot of time.  This fits the bill.  There is virtually no preparation and once in the oven you can forget it until the timer goes off.  

Below is the really simple recipe for Oven Barbecued Chicken Wings. 

Ingredients:

> Chicken Wings ( approx. 8-10)
> Kraft Original Barbecue Sauce
> 1/2 cup Water
> Tony Chachere's Seasoning
> Salt 
> Pepper
> Garlic Powder
> Ground Mustard

Process:

1) Preheat oven to 350 degrees.




2) Wash each piece of chicken individually and place in baking dish

3)  Begin seasoning with 1 tablespoon of each seasoning listed above.

4) Use tongs to flip chicken over and season the other side.

5) In a measuring cup, pour 1 cup of Kraft BBQ Sauce and 1/2 cup of water.  Mix very well and thoroughly.  (Note: Although the sauce will be thinner due to the water, it should not be a watery consistency.)


6) Pour mixture over chicken, being sure to cover each piece.  If any parts were missed, ladle some of the mixture from the bottom of the pan onto the chicken.  


7)  Cover baking dish with foil and place in 350 degree for 45 minutes or until done.

Simple, right?

Product Review: Philadelphia Cooking Creme

Last night, I had the pleasure of cooking with Kraft Philadelphia Cooking Creme (Italian Cheese and Herb) for the first time.  The product upon purchase comes with a small “brochure”, if you will, attached that includes numerous recipes to give you ideas on how to use the product.  Since, it was late when I arrived home and I hadn’t defrosted any meats that were included in their recipe options, I decided to wing it.  My recipe included the following items I had on hand in the pantry and “quick thaw” items from the freezer:   
·        Linguine
·        Lump Crab Meat
·        California Style Frozen Vegetables(Broccoli/Cauliflower/Carrots)
·        Onions (Chopped)
·        Garlic (Minced)
·        Olive Oil

I started with a drizzle of olive oil and added the onion and garlic to the skillet until the onions were almost transparent.  At that point, I added the frozen veggies and allowed those to cook over medium heat to soften and heat through.  After the veggies softened I stirred in the crab meat and cooked for about 3-5 minutes and then added the Philadelphia Cooking Creme.  After cooking the mixture approximately 3 minutes, I poured it over the cooked linguine and tossed together.  I served with steamed corn on the cob (see below).

My thoughts:  I loved the actual product.  It definitely serves its purpose of a quick meal solution.  You can really get creative with your additions and make some truly unique dishes that are all your own.  The family loved it and actual went back for seconds.  As a true pasta lover, I absolutely loved the simplicity of it and the ability to change the recipe according to what I have on hand. 
Although I loved it, next time I will watch the amount of veggies and ingredients I add.  I had too many ingredients and it didn’t come out as creamy as I would have liked for it to.  I actually ended up adding a little bit of the pasta water to it in order to thin it out a bit.  Prior to thinning it out, my husband actually joked that he need something to assist with his cotton mouthJ
End Judgment:  I will definitely use this product again and am anxious to try the recipes listed on the container as well as on the website.
